The Bread of Cerchiara can be recognized because it is compact, round and with a sort of hump, i.e. a lateral swelling, the so-called "rasella", given by the closure which is made by folding the dough over itself, just as it once was.

What distinguishes it from the others is the presence of an ancient natural mother yeast, which the families of Cerchiara have handed down from distant times; the same one that gives it that sense of texture and that delicious note of acidity.

The large shape and the slow cooling of the oven give the pasta the right cooking and make it keep all the scent and aromas of the ingredients

The long leavening, of at least six hours, in large wooden drawers, is responsible for its lightness and digestibility, as well as ensuring that this bread lasts much longer than the others over time, even up to 10 - 15 days.

Baking takes place in an oak, chestnut and beech wood-burning oven at 300°C, for about 2 – 4 hours, during which the bricks that had previously been red-hot slowly return the heat to the loaves of bread, making it golden outside and cooked inside.

Ingredients: flour 0, wholemeal flour, water exclusively from the Cerchiara spring, sourdough (strictly refreshed every evening) and a pinch of salt
