Rolled Pancetta 600 g

The rolled bacon is obtained, like the stretched one, from the part above the rib.
Once the pieces have been squared and trimmed, they are removed from the rind and placed in brine in steel tanks with the addition of natural aromas such as bay leaves and rosemary.
Once the salting time has passed, the meat is washed from excess salt, dried and massaged with spices such as flaked black pepper and sweet Calabrian chili pepper
It is then tightly rolled, tied and inserted into the net which will keep it in position throughout the maturation process, for approximately 3 months.

Choice of Meat


The rolled bacon is produced starting from the lean part of the pig's belly, and seasoned tightly rolled up on itself.

Preparation


The belly is stripped of the ribs, salted and peppered; massaged for a long time during salting to flavor the meat well, it is then covered with sweet/spicy Calabrian chili pepper, rolled up and inserted into a net to maintain its shape and left to mature.

Aging


It is carried out in rooms with static/ventilated systems to guarantee a seasoning that can come as close as possible to that done at home in the traditional way. The right time, controlled temperature and humidity will give the product the aromas and flavors of the cured meats that our grandparents used to make. In seasoning the bacon remains for at least 3 months

Peculiarities and scents


The rolled bacon looks like a delicious red and white spiral, in layers, where the red part is represented by the lean and the white part by a gelatinous fat which gives taste and softness to this cured meat. Before consuming it, we recommend removing it from the vacuum packaging and leaving it at room temperature for a couple of hours, so that it can oxygenate and release all its aromas and flavours.

Keep in the vacuum pack, at 4°, until the expiry date indicated on the label.

A spiral where lean pink and red stripes alternate with strips of noble, white fat, interspersed with sweet and spicy red Calabrian chili pepper and powdered black pepper.

Sweet but at the same time savory taste, thanks to the aromas used in the preparation.

It can be enjoyed plain, cut into thin slices and accompanied by cheeses and vegetables in oil, or cooked, in recipes for first courses and side dishes with vegetables.
