Chestnut honey is obtained from the flowers of chestnut plants that are found in the wild especially in numerous mountain areas.

It is represented by a single species, (Castanea Sativa, of the fagaceae family) and is a plant that can reach 30 meters in height, forming large forests on the Alps and the Apennines.

Organoleptic characteristics:

Chestnut honey differs from other types of sweetener such as acacia honey for a darker color (brown and sometimes tending to black) with intense and dark shades. Even the smell is much stronger than traditional honeys and is characterized by a less sweet taste with a bitter aftertaste that makes it a top quality product that can be used in different culinary contexts. Chestnut honey is also characterized by a more liquid consistency than standard, due to the rich presence of fructose.

Properties and uses:

Chestnut honey has beneficial properties for the body and for this reason it is recommended to use it on various occasions. Chestnut honey is rich in mineral salts such as potassium and iron, not to mention quantities of calcium, magnesium, sodium and manganese, allies for those who need a diet rich in mineral salts. The two main properties of chestnut honey are anti-inflammatory and anti-bacterial, without forgetting its anti-oxidant capabilities. This type of honey is ideal for a diet that combats anemia (i.e. the lack of iron in the body). Thanks to its antispasmodic properties it is an excellent ally to combat menstrual pain, combined with relaxing herbs such as chamomile. Its soothing and healing properties make it suitable during ulcer convalescence, but also to naturally combat colds, sore throats and flu symptoms.

Unlike traditional honeys, chestnut honey is much more bitter and has a strong and decisive flavor. However, its bitterness makes it perfect for combinations with sweet and savory foods. For the more daring, it is possible to combine chestnut honey with very aged cheeses such as Pecorino Sardo, Grana Padano or Parmigiano Reggiano, while among the meats it is possible to combine it with processed meats such as roast pork or baked white meats.

It is ideal for preparing mostaccioli, crunchy biscuits made with few ingredients. They appear as long and flat loaves, but the shape can vary depending on the occasion in which to serve them. It is the classic home recipe of which every family has its own version.
