Cavatelli – Pisani Pasta
Extremely characteristic format, a shell with a deep hollow inside.
Cavatelli are tasted and served with ragù or with vegetables such as broccoli or cardoncelli, with pork sauce or with spigatelli and minced meat.
They are typical of almost all of southern Italy, where housewives still use to prepare them by hand on a pastry board, hollowing out a piece of dough by pressing them with your finger and giving it that classic smooth gnocco shape.
