Bergamot is a citrus fruit from the Rutaceae family. The name comes from Turkish bey pear = “but of the lord”.

Production method:

It is a tree between three and four meters tall, with a crown between three and four meters. The flowers are white, very fragrant. The leaves are shiny and leathery like those of the orange tree and never fall, not even in winter. Flowering and new leaves appear as soon as the rainy season ends, at the beginning of March. The fruit is just over the size of an orange and just under a grapefruit; it has an intense yellow color more than grapefruit and less than lemon, externally it has a smooth and thin skin like a grapefruit, it is less round than grapefruit as it is flattened at the poles.

The cultivated plants are obtained by grafting three bergamot branches onto a one-year-old bitter orange rootstock. It remains in pots for a year and is buried at two years old. Grafting and transplanting the following year preferably take place in February or September. It has a productive life of 25 years, begins its production three years ago, reaches maximum productivity at 8 years and can reach up to one quintal per plant if pruned (the tops are cut so that the fruit grows below shelter strong summer sun and strong winds). Productivity is strongly influenced by temperatures and rainfall: it is a tree that cannot tolerate sudden changes in temperature and excessive or insufficient rainfall, while it tolerates heat well.
