Extra Virgin Olive Oil - 100% Italian

The harvest of the olives destined for the production of Extra Virgin Olive Oil is carried out starting from October of the oil production year.

The harvest is done directly from the tree, with the aid of mechanical means and for the production of the same the olives that have fallen naturally on the ground and on the permanent nets are not used. 

The Organic Extra Virgin Olive Oil you purchase is produced with only olives harvested on our estates and cold-pressed in our company oil mill.

In our estates there are several cultivars including: Dolce di Rossano, Roggianella, Carolea, Frantoio, Cassanese, Leccino.

In particular, this oil is obtained from a blend of the various cultivars.

It is therefore an Extra Virgin Olive Oil with a medium fruitiness with an average perceived bitterness and spiciness. With hints of freshly mown grass

The harvested olives are transported in rigid crates in order to guarantee aeration and the milling is carried out within 24 hours of harvesting, in our milling plant with a continuous extraction system, of the latest generation. Before pressing, the olives are subjected to defoliation and washing. During the processing there is no treatment other than washing, decanting, centrifugation and filtration. The maximum processing temperature is 27 ° C.

After extraction, the oil is stored in stainless steel containers, located in cool and dry rooms at a controlled temperature, for the optimal conservation of the extra virgin olive oil, in order to avoid unwanted variations of the chemical and organoleptic characteristics typical of the product.

Before packaging, our oil is subjected to natural decantation and filtration to remove any processing residues.
