La Calabrian nduja it is a typical Calabrian cured meat, with a soft consistency, known and appreciated throughout the world.

Nduja is made with pork, specifically with the parts of the bacon and lard, finely chopped and enriched with a generous quantity of red Calabrian chilli powder and chilli extract in sauce, rigorously spicy, which gives it its characteristic bright red colour. and the decidedly spicy flavour.

When the mixture is ready it is inserted into the natural casing and left to mature at controlled temperature and humidity for approximately 20/30 days.

This sausage has a soft consistency, making it versatile in the kitchen: nduja can be used on slices of toasted bread, as an ingredient to season pasta, for a tasty aperitif or to enrich and flavor various dishes.

The origin of the name nduja lies in the municipality of Spilinga, province of Vibo Valentia, in the heart of Calabria, hence the name nduja of spilinga

Choice of Meat


Our cured meats are produced from the best pork, selected from certified farms. The pigs used for cured meats are not the same ones we use for retail sale in butchers, but they are heavier.

Preparation


Nduja is prepared with the belly of heavier pigs since it must contain more fat than lean. The meat is minced very finely, so as to become a cream, seasoned with salt and Calabrian hot pepper, both in sauce and powder, and stuffed into long, hand-tied natural casings.

Aging


It is carried out in rooms with static/ventilated systems to guarantee a seasoning that can come as close as possible to that done at home in the traditional way. The right time, controlled temperature and humidity will give the product the aromas and flavors of the cured meats that our grandparents used to make. In seasoning the 'nduja remains for about 30 – 35 days
