Spicy crushed 500 g

Our spicy Schiacciata is produced with the same meat as the sausage: pork shoulder and belly, chopped and mixed with salt, finely ground spicy Calabrian chilli pepper and spicy Calabrian chilli extract in sauce.
The mixture is then placed in the appropriate bag and left to dry for around 3 days, then it is put under a press, hence the name, and left to mature at controlled temperature and humidity for around 60 days.

Choice of Meat


Our cured meats are produced from the best pork, selected from certified farms. The pigs used for cured meats are not the same ones we use for retail sale in butchers, but they are heavier.

Preparation


Schiacciata is made from pieces of shoulder, bacon, capocollo and a little ham.
The cuts of meat are stripped of tendons and cartilage, finely minced and mixed with salt and hot pepper, the mixture is bagged and placed under a press to obtain the typical flattened shape.

Aging


It is carried out in rooms with static/ventilated systems to guarantee a seasoning that can come as close as possible to that done at home in the traditional way. the right time, controlled temperature and humidity will give the product the aromas and flavors of the cured meats that our grandparents used to make. During the seasoning, the Schiacciata remains for at least 40 days

Peculiarities and scents


Spicy Schiacciata is a cured meat whose meat is medium-grained and flavored with the excellent Calabrian hot pepper. Lean and fat are present in equal measure, giving softness to each bite. Before being left to mature, it is pressed to give it the classic flat shape. We advise you to remove it from the vacuum and leave it to oxygenate at room temperature for a couple of hours before tasting it, so that all the aromas and flavors can be fully savored.

Keep in the vacuum pack, at 4°, until the expiry date indicated on the label.

 APPEARANCE AND COLOR


Flattened shape, medium grain dough, red slice pleasantly streaked with white.

TASTE AND FLAVOUR


Strong and gritty salami on the palate, very tasty and with a persistent taste thanks to the excellent spicy Calabrian pepper.

HOW TO TASTE IT


Schiacciata is to be enjoyed on its own, cut into not too thin slices and accompanied by other excellent cured meats for an inviting aperitif or appetizer, or it can be the perfect companion to a wonderful pizza.
